Ingredients:
4 medium green peppers, halved
1.5-pound ground beef, browned
1 packet taco seasoning mix, or seeking good eats homemade taco seasoning recipe
¾ c water
1-½ c cheddar cheese
1 c sour cream
½ c salsa
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Slice the peppers lengthwise and remove the seeds.
Step 3: Place the sliced peppers in a casserole dish and pour in ¼ cup of water.
Step 4: Cover the casserole dish and place it inside the microwave, then heat for about 7 to 10 minutes or until the peppers are tender.
Step 5: Place skillet on the stove and turn the heat to medium.
Step 6: Add in the ground beef and cook until crumbly and brown.
Step 7: Add in the water and taco seasoning and refer to the instructions provided on the package on how to cook it.
Step 8: Add in the sour cream into the cooked meat as well as 1 cup of cheddar cheese, and salsa. Stir until well combined.
Step 9: Apply cooking spray in a 13×9-inch baking dish.
Step 10: Arrange the cooked peppers into the prepared baking dish and stuff each with the meat & cheese mixture.
Step 11: Sprinkle each top with the rest of the cheese.
Step 12: Place the baking dish inside the preheated oven and bake for 20 to 30 minutes or until the cheese has melted completely.
Step 13: Remove from the oven.
Step 14: Serve immediately with a side of salsa and taco ingredients!
Notes:
Make sure to check every 5 minutes to check the doneness of the bell peppers.
