Ingredients:
8 oz spaghetti
1¼ pounds lean ground beef or ground turkey
1 (1-oz) package taco seasoning
⅔ c water
1 (10.75-oz) can cream of chicken soup
1 (10-oz) can Rotel diced tomatoes and green chillies undrained
1 (8-oz) package Velveeta cheese, cubed
1½ c shredded cheddar cheese
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray in a 9×9-inch baking pan.
Refer to the directions provided on the package of the pasta on how to cook it. Drain and rinse with cold water to stop the cooking process.
Place a large skillet on the stove and turn the heat to medium-high.
Add the ground beef, then cook until crumbly and brown. Discard any excess grease.
Add the taco seasoning and water, then stir until well mixed. Simmer for about 5 minutes.
Add the Velveeta, Rotel tomatoes, and soup. Stir until well combined.
Turn the heat down to low, then simmer until the cheese is melted completely.
Add the al dente pasta and toss until well coated with the delicious sauce.
Transfer everything into the greased baking dish and spread it evenly.
Sprinkle a generous amount of cheddar cheese on top.
Place it inside the preheated oven and bake for about 30 minutes or until done.
Remove from the oven and allow it to cool for a few minutes at room temperature.
Serve and enjoy!
