Ingredients:
10 oz. can of Rotel (do not drain) (diced tomatoes with green chiles)
1 sheet puff pastry, thawed (usually comes in a package of two)
½ lb. ground beef
1 tbsp chili powder
1 c shredded Mexican blend cheese
½ tsp pepper
½ tsp cumin
¼ tsp dried oregano
1 tsp garlic, minced
½ tsp onion powder
¼ tsp paprika
Optional Garnishes: lettuce, tomatoes, sour cream, salsa, guacamole, green onions, cilantro, etc.
1 tsp salt
Directions:
Prepare the oven and preheat it to 190 degrees C or 375 degrees F.
Apply cooking spray to a baking sheet.
Place a skillet on the stove and turn the heat to medium-high. Add the ground beef, then cook for a few minutes until crumbly and brown. Remove any accumulated fat in the skillet.
Add the garlic and sauté for about a minute or until aromatic.
Add salt, pepper, paprika, chili powder, cumin, undrained Rotel, dried oregano, and onion powder. Stir until well blended.
Cook for another 3 minutes. Remove the skillet from the heat.
Roll out puff pastry to your counter, then form it into a large rectangle, making sure that the pointy side of the triangle is facing you.
Add the meat mixture to the prepared dough and spread it evenly. Top it with shredded cheese.
Roll the dough from the pointy end. Seal the sides and slice it into small cuts. Use a serrated knife for this.
Lay the taco pinwheels onto the greased baking sheet and arrange them in a single layer. Make sure to leave a small space between each pinwheel.
Place the taco pinwheels in the preheated oven and bake them for about 10 to 12 minutes or until they turn golden brown.
Remove from the oven and top with your preferred garnishes.
Serve right away. Enjoy!
