Ingredients:
¾ c whole milk
4 Eggs
1 (1 ounce) packet taco seasoning
2 lbs. ground beef
2 c lettuce, chopped or shredded
1 ¾ c biscuit mix or Bisquick
2 c sharp cheddar cheese, grated
1 c tomato, finely chopped
½ c sour cream
kosher salt and freshly ground pepper, to taste
black olives, sliced, optional
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Apply cooking spray in a 9×13-inch baking dish.
Add milk and eggs into a large mixing bowl. Beat until well mixed.
Add the biscuit mix, salt, and pepper. Stir until well mixed.
Place a skillet on the stove and turn the heat to medium.
Add the ground beef, then cook until crumbly and brown. Sprinkle salt and pepper to taste. Discard accumulated grease.
Add the taco seasoning, then stir until well blended.
Transfer the ground beef into the prepared baking dish and spread it evenly.
Place the baking dish inside the preheated oven and bake the casserole for about 25 minutes or until done.
Remove from the oven and let it rest for about 10 minutes at room temperature.
Add the sour cream over the biscuits and spread it evenly.
Add the tomatoes, olives, and chopped lettuce on top.
Sprinkle a generous amount of cheddar cheese over.
