Ingredients:
1 tbsp Oil
1 tbsp butter
6-7 Boneless Skinless Chicken Thighs
¼ c Chicken Stock
2-3 sprigs Fresh Rosemary
2 Garlic Cloves
For Spice Rub
½ tsp Onion Powder
2 tbsp Light Brown Sugar
½ tsp Chili Powder
½ tsp Smoked Paprika
1 tsp Garlic Powder
½ tsp Salt
¼ tsp Black Pepper
Directions:
Add all the dry ingredients (Rub ingredients) into a mixing bowl. Whisk until well combined.
Use paper towels to pat dry the chicken thighs.
Rub all sides of the chicken thighs with the mixed seasonings. Make sure to coat them well.
Place a heavy cast-iron skillet on the stove and turn the heat to medium.
Add oil and butter, then allow them to become hot.
Add the garlic and sauté until aromatic.
Add the chicken thighs and cook each side for 5 minutes or until they turn golden brown.
Gradually add the stock and stir until well mixed. Add the rosemary sprig.
Scrape the bottom of the skillet to get the brown bits.
Cover the skillet and cook the chicken for 2 more minutes over high heat.
Remove the cover and simmer for a minute or until the texture of the sauce becomes thick.
Serve hot over rice and veggies on the side. Enjoy!
