Ingredients:
For the sweet potato filling:
3 c peeled cooked sweet potatoes, from about 3 lbs (about 1.36kg) sweet potatoes
½ c (99g) granulated sugar
½ c (113g) butter, melted and cooled
½ c (113g) milk
2 large Eggs
1 tsp vanilla
½ tsp salt
For the streusel topping:
1 c (213g) light brown sugar, packed
½ c (71g) all-purpose flour
1 c (113g) chopped pecans
½ c (113g) unsalted butter, melted
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Add in the prepared potatoes, melted butter, eggs, milk, vanilla, salt, and sugar in a food processor. Pulse for a minute until it turns into a smooth puree. (You can also use an electric mixer to combine all the ingredients.)
Step 3: Apply cooking spray in a 12×8-inch casserole dish.
Step 4: Transfer the mixture into the prepared casserole dish and spread it evenly on the bottom.
Step 5: In a mixing bowl, add in the flour, pecans, and brown sugar. Stir until well combined.
Step 6: Add in the melted butter and stir until well mixed or moist. Make sure not to over mix to prevent it from becoming pasty.
Step 7: Spread the mixture on top of the sweet potato mixture.
Step 8: Place it inside the preheated oven and bake for 30 minutes or until the top turns golden brown.
Step 9: Remove from the oven and allow it to cool for at least 5 minutes.
Step 10: Serve warm and enjoy!
Notes:
How to Cook the Sweet Potatoes:
Prepare the oven and preheat to 200 degrees C.
Wash and poke small holes on the potatoes using a fork, then bake them inside the preheated oven for 60 to 75 minutes.
Remove from the oven and peel them, then allow them to cool at room temperature.
In a mixing bowl, add in the cooked potatoes and eggs. Stir until well combined.
You can also prick the potatoes and heat them inside the microwave for 10 minutes or so.
