Ingredients:
1 tbsp vegetable or canola oil
2 (12-16 oz. each) pork tenderloins, trimmed
2 tbsp chili powder
¼ c ketchup
2 tsp cider vinegar
1 tsp salt
1 ½ tsp sugar
½ tsp pepper
1 tsp smoked paprika
Directions:
Place the oven rack in the center of the oven. Preheat it to about 450 degrees F.
Line a baking pan with aluminium foil.
Use paper towels to pat dry the pork tenderloin.
Add salt, pepper, paprika, and chili powder into a mixing bowl. Whisk until well incorporated. Set aside about 1 tbsp of the mixture for later use.
Sprinkle the rest of the seasonings over the pork tenderloin, then rub each until coated.
Place a 12-inch large nonstick skillet on the stove and turn the heat to medium. Add oil and allow it to become hot.
Add the pork tenderloins into the hot skillet, then cook all sides for about 5 to 7 minutes or until they turn brown. Move them into the prepared baking pan.
Place the pan in the preheated oven and bake the pork tenderloins for about 15 to 18 minutes or until done.
Remove from the oven and allow the pork tenderloins to rest for at least 5 minutes at room temperature.
Add vinegar, ketchup, sugar, and the reserved seasonings into a mixing bowl. Stir until well blended.
Brush the mixture over the pork tenderloins.
