Ingredients:
For the wings
3 tbsp olive oil
4 pounds chicken wings, drumettes, and flats separated
Black pepper
Kosher salt
For the sauce
⅔ c tomato paste
5 garlic cloves, crushed
1 ½ c Coca-Cola
⅓ c red pepper hot sauce (like cayenne or tabasco pepper sauce)
¾ c dark brown sugar
1 tsp kosher salt
1 tbsp smoked Spanish paprika
Directions:
For the Wings:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Place metal rack over two baking sheets.
Line with aluminium foil the 3rd baking sheet.
Use paper towels to pat dry the chicken wings.
Rub each chicken wing with olive oil, then rub each with salt and pepper.
Lay the chicken wings onto the prepared baking sheets. Make sure to leave a space between each.
Place inside the preheated oven and bake for about 45 minutes or until the chicken wings turn golden brown.
Remove from the oven and allow the chicken wings to cool for a few minutes at room temperature.
For the Sauce:
Place a saucepan on the stove, then add brown sugar, tomato paste, garlic, and Coca-Cola. Stir until well blended.
Turn the heat to high and allow the mixture to boil.
Reduce the heat to low and simmer for a few minutes.
Add paprika, salt, and hot sauce. Stir until well blended and thick. Add more seasonings if needed.
Dip each chicken wing into the sauce and make sure to coat them completely.
Bake for another 7 minutes or until the glaze looks delicious!
