Ingredients:
½ c cornstarch
1 lb. (450 grams) pork loin (or tenderloin), cut to 1-inch (2-cm) pieces
Marinade
1 Egg, beaten
½ tsp salt
1 tbsp peanut oil (or vegetable oil)
Sauce
2 tbsp Shaoxing wine (or dry sherry)
2 tsp cornstarch
4 tbsp apple cider vinegar
½ tsp salt
2 tbsp ketchup
4 tbsp brown sugar
Stir-fry
2 green onions, sliced
2 cloves garlic, minced
⅓ to ½ c peanut oil (or vegetable oil)
Directions:
In a large mixing bowl, add vegetable oil, pork, and salt. Toss until well combined. Let the pork marinate for about 15 minutes.
In another mixing bowl, add all the ingredients for the sauce. Stir until well blended.
Add the egg into the pork, then stir until well coated.
Add the cornstarch and stir until the pork is well coated.
Place a heavy skillet on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add the pork and cook each side for about 3 minutes or until they turn golden brown.
Remove the pork from the skillet and transfer them onto a clean plate. Allow them to cool for a few minutes.
Add 2 tbsp of oil into the same skillet and allow it to become hot.
Add the garlic and onion, then sauté until aromatic and soft.
Add the sauce mixture, then stir until well blended. Cook for a few minutes until the texture becomes thick.
Put the pork back into the skillet, then toss until well coated by the delicious sauce.
Serve over rice and enjoy!
