This Sweet Amish Macaroni Salad is one of the best salads you can make! It is easy to throw together, and super delightful with a hint of sweetness. This salad is the best macaroni salad I have ever tasted!
INGREDIENTS
Salad:
4 hard-boiled eggs -chopped
1 small onion – finely diced
1 pound salad, macaroni
1 small, sweet pepper – seeded and diced small (red or orange)
3 celery ribs – diced small
Dressing:
½ c. sugar
2 c. light mayonnaise – if using Miracle Whip
1-2 tablespoons yellow or Dijon mustard
1 tablespoon white vinegar OR 1 tablespoon apple cider vinegar
2 tablespoons dill pickle relish
¾ teaspoon celery seed
paprika (to garnish)
¼ teaspoon salt
How to make Sweet Amish Macaroni Salad
Step 1: Following the package directions, cook the macaroni in a large pot of boiling water over medium heat. Then, drain well and rinse with cold water when done. To a large bowl, transfer the cooked macaroni.
Step 2: In the meantime, whisk the dressing ingredients until well mixed and set aside.
Step 3: Then, chop the veggies and hard-boiled eggs. Set them aside.
Step 4: To the cooled macaroni, add the veggies and chopped hard-boiled eggs. Toss gently until coated.
Tips: This salad is extra creamy. To adjust the creaminess, take out ½ to ⅓ c. of the dressing and keep it in the fridge. If refrigerating the salad it might turn out too dry. I suggest, adding the reserved dressing before serving.
Step 5: Place the salad in the fridge for at least 1 hour before serving. To set the flavor better, keep this salad in the fridge overnight.
Step 6: Before serving, sprinkle paprika on top. Enjoy!
NOTES:
You can reduce the sugar to ¼ c if you like a less sweet dressing.
If you prefer, you can decrease the amount of mustard.
You can swap sugar with Splenda.
If using Miracle Whip, decrease the amount of sugar.
I like dill pickle relish, but you can substitute it with sweet pickle relish if desired.
Omit the bell peppers if preferred. Or swap it with shredded carrots.
In an airtight container, keep any leftovers and store them in the fridge for up to 3 days.
