Pan-fried pork chops smothered in an easy, delightful gravy. These tender and juicy pork chops are super easy and quick to make. For a simple filling meal, serve them with mashed potatoes and your favorite veggies on the side.
Ingredients
Pork Chops:
3 tbsp olive oil
4 pork chops
½ teaspoon onion powder
½ teaspoon garlic powder
¼ teaspoon paprika
¼ c. flour
Salt, to taste
Gravy:
4 tbsp Butter
4 tbsp Flour
2 c. chicken broth
1 tsp low sodium soy sauce, can sub Worcestershire sauce
1 tsp onion powder
1 beef bouillon cube or 1 teaspoon better than bouillon
1 tsp garlic powder
¼ tsp dried rosemary
¼ tsp dried sage
¼ tsp dried thyme
2-3 drops of Kitchen Bouquet, optional
⅓ c. half and half
How to make Pork Chops in Gravy (Smothered Pork Chops)
Step 1: Season all sides of the pork chops with salt. Allow the chops to sit for about 30 minutes.
Step 2: Using a saran wrap, cover the pork chops and pound using a meat tenderizer.
Step 3: In the meantime, place the flour, garlic powder, onion powder, and paprika on a plate. Mix well until blended.
Step 4: To make the gravy, whisk the chicken broth, beef bouillon, soy sauce, and seasonings until well combined. Set aside.
Step 5: Completely pat dry the pork chops. In the flour mixture, dredge the pork chops just before frying.
Step 6: In a large pan, heat the olive oil over medium-high heat. Once hot, add the pork chops 2 at a time and sear for about 2 minutes on each side until golden. You can use kitchen tongs to hold the chops and sear the fat outside (for bone-in pork chops). If needed, add more olive oil or decrease the heat during searing. When done, set the pork aside.
Step 7: Once all the pork chops are seared, clear any black remnants from the pan, leaving as much “fond”.
Step 8: In the same pan, melt the butter over medium heat. Once melted, add the flour and stir well until blended. Continue stirring for another 2 minutes or until the smell of the flour is gone.
Step 9: Gradually pour in the chicken broth mixture along with the half-and-half, stirring constantly until blended.
Step 10: Bring everything to a gentle boil. Once boiling, decrease to a simmer, stirring constantly. To darken the color of the gravy, you can add about 2 to 3 drops of Kitchen Bouquet if desired.
Step 11: Adjust the heat to medium-low. Add the pork chops to the skillet. Over the pork, spoon the sauce. Put the lid on and continue to cook the pork chops for additional 10 minutes, flipping halfway.
Step 12: Turn the heat off but leave the cover on. Allow the chops to sit for about 5 minutes in the skillet.
Step 13: Enjoy the smothered pork chops with mashed potatoes, and roasted carrots or green beans. Enjoy!
