Easy and super delicious peach cobbler made with fresh peaches. For this recipe, you can use either strawberries, blueberries, blackberries, raspberries, or nectarines. Best serve warm with whipped cream or vanilla ice cream.
Ingredients:
3 tbsp real butter
¾ c all-purpose flour (the gluten-free version is below.)
½ c sugar, (if the fruit is a tart increase to ¾ c)
1 tsp baking powder
A pinch of nutmeg
¼ tsp of salt
¾ c buttermilk (i used ¾ c organic milk + 1 teaspoon lemon juice)
2 c only of sliced fresh peaches (or fruit of choice)
1 Tbsp of sugar for the top
Directions:
Step 1: Mix well a half cup brown rice flour, half cup corn starch, half cup Tapioca flour, half cup potato starch, 1 tbsp protein whey. You don’t need to add xanthan gum, use instead organic milk plus lemon juice if you want a gluten-free version.
Step 2: Place the oven rack on the upper-middle position. Preheat the oven to 175 degrees C or 350 degrees F.
Step 3: Add in 2 cups of the fruit into the batter. Make sure to make room for the batter to double its volume. If you put in too much fruit the cooking time will take longer and the centre may not get done well.
Step 4: Place the butter in an 8-inch square pan. Put it inside the oven and allow it to melt.
Step 5: Remove pan from the oven. To double the size of the, use two 8-inch pans.
Step 6: In a small mixing bowl, add the flour, baking powder, ½ cup of sugar, nutmeg, and salt. Whisk until well mixed.
Step 7: Add in milk and whisk until smooth. Transfer the batter into the pan and sprinkle fruits on top.
Step 8: Place it inside the oven and bake for 50 to 60 minutes or until the bubbly and brown.
Step 9: Remove from the oven and allow it to cool at room temperature.
Step 10: Serve and enjoy!
Note:
To remove the skin from peaches, wash and place them in a large bowl with ice water.
Place a pot with water on the stove and turn the heat to high. Add in 1 tablespoon of baking soda at a time until 5 tablespoons are added.
Add in the peaches and heat for 30 seconds. Remove from the boiling water and drop them into the ice water.
Start peeling the peaches when they are cool enough.
