This homemade beef stew with tender chunks of meat, carrots, and potatoes in a mouthwatering sauce is another amazing dinner option! Super easy to make, very comforting, and perfect to serve with cauliflower rice, cornbread, salads, or steamed veggies.
Ingredients
2 tablespoons Olive Oil
2 pounds Beef Chuck Roast cut into 2” chunks, excess fat removed
2 tablespoons Gluten-free All-Purpose Flour or Whole Wheat for non-gluten
½ Yellow Onion, Chopped Large
4 Garlic Cloves, minced
¼ c. Tomato Paste
2 Yukon Gold Potatoes, diced into 2” pieces
2 c. Beef Broth
1 tablespoon Worcestershire Sauce
1 Bay Leaves
1 Large Carrot or two small-medium, cut into 2” chunks
2 teaspoons Fresh Thyme Leaves to garnish
1 teaspoon Kosher Salt
½ teaspoon Coarsely Ground Black Pepper
How to make Easy Homemade Beef Stew
Step 1: Prepare the oven. Preheat it to 325 degrees F.
Step 2: On all sides, season the beef chunks with salt and pepper. Then, sprinkle with flour and toss to coat.
Step 3: In a large Dutch oven, heat the olive oil over medium heat. Once hot, add the beef in batches and sear for about 3 to 4 minutes on all sides. To a plate, transfer the browned beef and set aside.
Step 4: Next, add the onions along with the garlic and carrots. Continue to cook for another 2 to 3 minutes or until slightly browned, stirring often.
Step 5: Add the potatoes into the Dutch oven. Pour in the beef broth, then add the tomato paste, bay leaf, thyme, and Worcestershire sauce. Scrape the browned bits from the bottom of the pot using a wooden spoon.
Step 6: Bring everything to a simmer while stirring. Then, place the beef back into the pot. Put the lid on and transfer the pot into the preheated oven.
Step 7: Bake the stew for about 2 to 2 ½ hours or until the beef is very tender.
Step 8: Remove and discard the bay leaf. If needed, season the stew with more salt and pepper.
Step 9: Serve the homemade beef stew warm. Enjoy!
Note: If you like more broth to your stew, you can add an extra 1 to 2 cups of water or broth.
