½ c. cornstarch
½ c. oil (vegetable or canola oil)
salt and freshly ground black pepper
Sauce:
1 tsp ground ginger, or 1 tbsp fresh minced ginger
3 cloves garlic, minced

⅓ c. rice vinegar
¼ c. light brown sugar, packed
1 ½ tsp cornstarch
½ tsp crushed red pepper flakes or more, to taste
How to make General Tso’s Chicken
Step 1: Into a bowl, place the sauce ingredients and mix well until blended. Set aside.
Step 2: Into a large ziplock bag, add the cornstarch, flour, salt, and pepper. Seal the bag and shake well.
Step 3: In another bowl, beat the egg whites.
Step 4: To the egg whites toss in the chicken pieces. Into the zip lock bag, spoon the coated pieces of chicken, letting the excess egg drip back into the bowl. In the cornstarch mixture, evenly coat the chicken.
Step 5: In a hot large skillet over medium-high heat, drizzle the oil. To the hot oil, add the chicken (in batches) and sear for about 2 to 3 minutes per side or until golden brown and the chicken is completely cooked. Transfer the seared chicken to a plate. Cook the remaining chicken.
Step 6: To the pan, add the sauce and simmer until warm and thickened. Add the chicken and toss in the sauce.
Step 7: Serve General Tso’s chicken right away with brown/white rice garnished with some chopped green onions. Enjoy!
Notes:
You can use extra-firm tofu in place of chicken if you want to make this dish vegetarian. Between paper towels, place the tofu. Top with a cast-iron skillet or something heavy to press the excess moisture out.
Easily make this recipe in the air fryer. Evenly spread the chicken pieces on a greased air fryer basket, drizzle with olive oil, and cook at (preheated air fryer) 400 degrees for 15 minutes.
To make this in a slow cooker, whisk the sauce ingredients first. Ready the chicken the same, but cook for only 1 minute per side on very high heat. Using non-stick cooking spray, grease your slow cooker and add the chicken. On top, pour half of the sauce. Set to cook for 2 to 3 hours on low. Then, whisk in the rest of the sauce. Before serving, garnish with some chopped green onions.
