Ingredients
2 tbsp olive oil
½ c. butter, (1 stick)
1 pound chicken tenders
½ tsp garlic powder
¼ tsp red pepper flakes
2 tbsp minced garlic
1 tsp salt, divided
1 ½ c. white rice, (uncooked)
3 c. chicken broth
½ c. dry white wine, (like Pinot Grigio)
½ c. Parmesan cheese, (grated or shredded)

How to make Chicken with Garlic Parmesan Rice
Step 1: In a large skillet, heat the olive oil over medium heat. With salt, pepper, and garlic powder, season the chicken. Place the chicken into the hot oil and cook until browned and just cooked. Set the chicken aside when done.
Step 2: Into the now-empty skillet, add the butter, garlic, pepper flakes, and half tsp salt. Saute for a few minutes over medium heat. Then, adjust the heat to medium-high. Pour in the white wine, stir, and continue to cook for about 5 minutes. Take off the heat and reserve 3 tbsp of the pan sauce.
Step 3: To the skillet, add the uncooked rice with the rest of the butter sauce. Stir well and pour in the chicken broth. Add the rest of the half tsp of salt. Bring everything to a low boil. Once boiling, adjust the heat to medium-low. Put the lid on and let everything simmer for about 20 minutes or until the rice is tender, stirring a few times while cooking.
Step 4: Over the rice, sprinkle the Parmesan. On top, arrange the chicken tenders. Tent the dish and take off the heat. Allow the dish to sit for about 5 minutes.
Step 5: Before serving, drizzle with the reserved pan sauce and garnish with parsley. Enjoy!
