Ingredients:
4 Tbsp olive oil divided
2 slices bacon chopped
6 ounces brown mushrooms thinly sliced
⅓ c onion, chopped (from ½ small onion)
1 ½ teaspoons sea salt divided
½ teaspoon black pepper divided
1 garlic clove minced
¼ c fresh parsley chopped, plus more to garnish
1 ½ pound pork tenderloin silver skin removed
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Place a heat-proof skillet on the stove and turn the heat to medium.
Add 2 tbsp of oil and allow it to become hot.
Add the chopped bacon and cook until crispy.
Add the mushroom slices and cook until brown.
Add the minced garlic, chopped parsley, salt, and pepper. Saute until aromatic.
Remove everything from the skillet onto a clean plate.
To Stuff the Pork Loin:
Run a knife over the fatty part of the pork loin and make shallow slits.
Unroll the pork loin, then cover it with plastic wrap.
Use a meat mallet to gently pound the meat to ½-inch thick.
Add the mushroom mixture over the meat and spread it evenly.
Roll the pork loin, then use toothpicks to lock the sides.
Rub salt and pepper all over the pork loin.
In the same skillet, add 2 tbsp of oil and allow it to become hot.
Add the pork loin and cook each side for 4 minutes or until brown.
Place the skillet with the pork loin inside the oven and cook for another 20 minutes at 400 degrees F.
Remove from the oven and allow it to rest for about 10 minutes at room temperature.
