Ingredients:
½ large onion, chopped and sauteed
½ c almond flour
2 large Eggs
chopped parsley (we use these herb shears)
8 ounces sliced provolone cheese
salt and pepper to taste
2 pounds of ground beef
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Place a pan on the stove and turn the heat to medium.
Add a bit of oil and allow it to become hot.
Add the onions into the hot pan, then sauté for a few minutes until translucent. Turn off the heat and let the onions cool.
Add eggs, flour, parsley, and ground beef into a large mixing bowl. Use your clean hands to mix everything until well incorporated.
Add the sauteed onions into the meat mixture, then stir until well mixed.
Add about ¾ of the meat mixture into a loaf pan and spread it evenly to the bottom and sides.
Add ½ of the cheese slices in the middle of the meat layer.
Add the rest of the meat mixture over the cheese and spread it evenly.
Lay the rest of the cheese slices over the meat layer. Cover the meatloaf with foil entirely.
Place it inside the preheated oven and bake for about 1 to 1 hour and 15 minutes.
Remove the foil cover, then bake for another 10 minutes or until the cheese melts completely.
Place the meatloaf at room temperature and allow it to cool for a few minutes.
Slice the meatloaf into even servings.
