Ingredients:
1 ½ c all-purpose flour
2 tsp baking powder
½ tsp salt
1 c plain Greek yoghurt
1 c sugar
3 large Eggs
1 ½ tsp almond extract
½ c vegetable oil
1 c diced strawberries about 1 ¼ cup whole
Glaze:
½ c smashed strawberries about 1 cup whole
2 c powdered sugar
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray in a 9-inch loaf pan.
Add flour, salt, and baking powder into a mixing bowl. Whisk until well mixed.
In another mixing bowl, add the eggs, Greek yoghurt, oil, sugar, and extract. Stir until well mixed.
Transfer the dry ingredients into the wet ingredients and stir until well combined.
Add the strawberries and stir until just mixed.
Transfer the batter into the prepared pan and spread it evenly.
Place it inside the preheated oven and bake for about 50 minutes or until a toothpick comes out clean after inserting it in the middle.
Remove from the oven and allow it to cool for about 10 minutes at room temperature.
For the Glaze:
Add powdered sugar and strawberries into a mixing bowl. Mash until well mixed.
Spread the glaze over the cooled cake. Let it rest for a couple of minutes.
Serve and enjoy!
