Ingredients:
Steak
2 garlic cloves, whole
4 tbsp of butter
4 sprigs of thyme
freshly ground black pepper
2 (10 ounces) ribeye 1 inch thick
sea salt
3 tbsp of vegetable oil
Potatoes
olive oil
¼ c of parsley, chopped
6 small Idaho, boiled
½ c of Parmesan, grated
salt
pepper
Cream Sauce
½ c of grated Parmesan cheese
1 tbsp of butter
salt
½ lemon, juiced
1 c of heavy cream
freshly ground black pepper
1 tbsp of olive oil
2 tbsp of whole mustard seed
3 cloves of garlic, minced
Directions:
For the Steak:
Use paper towels to pat dry the rib eye, then sprinkle salt and pepper on top and rub each until both sides are well coated.
Place a heavy skillet on the stove and turn the heat to medium-high.
Add 2 tbsp of vegetable oil and allow it to become hot.
Add the steak, then sear each side for about 4 minutes or until brown.
Add butter and allow it to melt followed by the thyme and garlic clove. Baste the steak with garlic-flavored butter for about 5 minutes. Transfer the steak onto a clean plate.
For the Potatoes:
Line a baking sheet with parchment paper, then place the cooked potatoes on it. Add drizzle olive oil and sprinkle salt, pepper, and Parmesan cheese on top. Mash the potatoes.
Place the baking sheet in the preheated oven and broil the potatoes for about 10 minutes or until they turn golden brown.
Remove from the oven and sprinkle freshly chopped parsley on top.
For the Cream Sauce:
Place a pot on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add the garlic, then sauté for a few minutes until aromatic.
Pour in the heavy cream, then stir until well blended. Simmer it for 5 minutes.
Add the butter, salt, pepper, lemon juice, Parmesan cheese, and whole-seed mustard. Stir everything until well blended.
