This recipe has always been a part of my family since I was little. My aunt used to make these delicious muffins all the time! Feta cheese and sun-dried tomatoes made this breakfast food extra special! The best thing about this is that you can make it ahead of time. Place it inside the fridge, then reheat in the microwave. You don’t need to worry about preparing breakfast every day!

Ingredients:
2 c spinach, chopped
¼ c feta cheese, crumbled
½ c sun-dried tomatoes, drained and chopped
4 Eggs
¾ c egg whites
cooking spray
1 tsp Italian seasoning
salt and pepper to taste
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Apply cooking spray to a 12-cup muffin pan.
Add spinach, eggs, Italian seasoning, salt, pepper, and egg whites into a mixing bowl. Whisk until well combined.
Transfer the egg mixture to the prepared muffin cups and spread it evenly. Make sure just to fill it up about ¾ full.
Top each muffin cup with feta cheese and sun-dried tomatoes.
Place the pan inside the preheated oven and bake the muffins for about 15 to 18 minutes or until done.
Remove from the oven and allow them to cool for at least 5 minutes at room temperature.
Loosen the sides of the cup with a butter knife.
Serve and enjoy!

Place any leftovers in an airtight container, then place them inside the fridge.
