The sauce alone of this awesome dish is more than enough for me! Serve this Spinach and Artichoke Chicken over rice or mashed potatoes, and you have yourself a meal to remember! Have a blessed day, everyone!
Ingredients:
3 ounces Freshly Grated Parmesan
½ c Mayonnaise
½ c Sour Cream
¼ Onion- finely chopped
2 pounds boneless skinless chicken breast (about 3-4 chicken breasts)
½ Can Artichoke Hearts drained and diced
½ teaspoon garlic powder
½ teaspoon salt
4 c Fresh Spinach coarsely chopped (about 2 ounces)
½ teaspoon pepper
2 teaspoons Dijon Mustard
8 ounces Mozzarella Cheese grated
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Lay the chicken breasts onto a large baking sheet.
Sprinkle ¼ teaspoon pepper, ¼ teaspoon salt, and garlic powder on top of the chicken breasts, then rub each until well coated.
In a mixing bowl, add all the cheeses and stir until well blended. Reserve about ⅓ of the mixture for later use.
In a separate bowl, add sour cream, mustard, salt, pepper, onion, and mayonnaise. Stir until well blended.
Add the reserved cheese mixture, then stir until well blended.
Add the artichoke hearts and chopped spinach, then stir until well incorporated.
Pour the mixture over the chicken and spread it evenly.
Place the baking sheet inside the preheated oven, then bake the chicken for about 30 to 40 minutes or until done.
Remove from the oven and allow Spinach and Artichoke Chicken to rest for a few minutes at room temperature to incorporate all the flavours.
Serve warm and enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 3 days or 3 months inside the freezer.
