Ingredients:
1 (12 ounces) fully cooked smoked sausage, any variety
16 oz. dry pasta
2-3 cloves garlic, minced
3 tbsp butter
1 c chicken broth
3 tbsp flour
¼ tsp red pepper flakes
½ c grated Parmesan cheese
2 c half and half
1-2 tbsp chopped fresh parsley
¼ tsp cayenne pepper
2 c grated mozzarella cheese, divided
½ tsp salt
¼ tsp pepper
Directions:
Place a large pot with salted water on the stove and turn the heat to high. Allow the water to boil.
Add the pasta and cook until firm to bite. Drain and rinse with cold water to stop the cooking process.
Place a large skillet on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the garlic and sauté until aromatic.
Add flour, then stir and cook for about a minute.
Add the broth and stir until well blended.
Add the half & half, then stir until well blended as well.
Add the cayenne, red pepper flakes, salt, and pepper. Stir until well mixed and allow the mixture to simmer for 5 minutes or until the texture becomes thick.
Add 1 cup of mozzarella cheese and Parmesan cheese, then stir until well mixed and melted completely.
Slice the sausage into ¼-inch cuts, then toss them into the skillet with the sauce.
Add the drained pasta and freshly chopped parsley, then toss until well combined. Add more seasonings if necessary.
Prepare the broiler and preheat.
Apply cooking spray in a 9×13-inch baking dish.
Transfer the mixture into the prepared baking dish and spread it evenly.
Sprinkle the rest of the mozzarella cheese on top.
Place it inside the preheated broiler and allow the cheese to melt. This will take about 2 to 3 minutes.
Remove from the oven and let it sit at room temperature for a few minutes.
