This delicious Spicy Honey Lime Chicken will surely make you very happy today! Oh, man, this is a must-try!
Ingredients:
2 ½ lbs boneless skinless thighs (or breasts), trimmed and cut into 2-inch pieces
Garnish: 2 tablespoons chopped cilantro or parsley; lime wedges
Marinade/Glaze:
3 tablespoons soy sauce low sodium is good if you have
6 tablespoons honey or maple syrup
1 teaspoon lime zest from one lime
3 tablespoons lime juice from 1 ½ to 2 limes
4 garlic cloves, minced or grated (or ½ tsp garlic powder)
1 ½ tablespoons grated fresh ginger (about 1 ½ inch of fresh ginger)
1 tablespoon vegetable oil
1 ½ tablespoons Sriracha sauce for pretty spicy (use more or less to taste)
1 ¼ teaspoon salt
½ teaspoon cornstarch (to thicken to glaze consistency) Optional
Directions:
Step 1: In a small mixing bowl, add all the ingredients for the marinade.
Step 2: Transfer about ½ of the marinade in a container.
Step 3: Add the chicken into the container and let it marinate for 30 minutes to overnight.
Step 4: Prepare the grill and apply cooking oil.
Step 5: Preheat to medium-high.
Step 6: Skewer the marinated chicken and apply cooking spray all over the chicken.
Step 7: Place the chicken on the grill and cook for about 9 to 12 minutes or until golden brown.
Step 8: Garnish with parsley and put lime wedges on the side.
