Ingredients:
For the Chicken
1 tablespoon olive oil
1 tablespoon chili powder
½ tsp ground cumin
¼ tsp onion or garlic powder
2 cloves garlic, crushed or minced
1 lb. of chicken breasts, cut into bite-size pieces
2 tablespoons olive oil
a squeeze of lime optional
¼ tsp kosher salt
cilantro lime sauce
1 tsp lime juice
¼ c cilantro
salt and pepper to taste
½ c sour cream or Greek Yogurt or Mayo
1 clove garlic
To Assemble
6-8 small tortillas of corn or flour
2 avocados, sliced
Directions:
For the Chicken:
Slice 3 chicken breasts into small cubes.
Add garlic, olive oil, onion powder, salt, cumin, and chili into a mixing bowl. Whisk until well blended.
Add the chicken slices into the bowl with the olive oil mixture, then toss until well coated.
Cover the bowl with plastic wrap, then place it inside the fridge. Marinate the chicken for 10 minutes to 2 days.
To Cook the Chicken:
Place a cast-iron skillet on the stove and turn the heat to high.
Add olive oil and allow it to become hot.
Add the chicken slices into the hot skillet, then cook all sides for about 8 to 12 minutes or until they turn brown.
Turn the heat off, then squeeze lime on top of the chicken.
For the Cilantro Lime Sauce:
In a food processor, add lime juice, salt, pepper, sour cream, garlic, and cilantro. Pulse for about a minute or until well blended.
To Assemble:
Top the char tortillas with the chicken, avocado, and cilantro sauce.
