Ingredients:
9” pie crust store-bought or homemade
1.5-pound sweet potato about 2 medium sweet potatoes
¼ c butter softened
¾ c packed brown sugar
2 large eggs lightly beaten
½ c evaporated milk
1 ½ teaspoons vanilla extract
½ teaspoon cinnamon
½ teaspoon nutmeg
¼ teaspoon ground ginger
¼ teaspoon salt
Directions:
Step 1: Place the sweet potatoes inside the oven or microwave. Bake for about 50 minutes at 425 degrees F or heat inside the microwave for about 10 minutes. (Make sure to turn the potatoes while doing this.)
Step 2: Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Step 3: Place the cooked potatoes into a large mixing bowl, then mash them.
Step 4: Add the rest of the ingredients and whisk until well mixed.
Step 5: Transfer the mixture into a baking pan.
Step 6: Place the pan inside the preheated oven and bake for 40 to 45 minutes or until a toothpick comes out clean after inserting it in the middle.
Step 7: Remove the pie from the oven and let it sit on a wire rack to cool for 1 hour at room temperature.
Step 8: Serve and enjoy!
Notes:
Refer to the directions provided on the pack of the pie crust.
Make sure to allow it to cool before serving for the best results.
I like to make this pie the night before I serve it. It tastes better that way. If you want to do it as well, just place the pie inside the fridge to chill and serve it in the morning. Yum!
Make sure not to boil the sweet potatoes or it will become soggy.
