Ingredients
1 ½ c. all-purpose flour
1 pounds chicken I used legs and thighs
1 teaspoon salt
1 teaspoon celery seed
1 tablespoon onion powder
1 teaspoon garlic powder
1 teaspoon poultry seasoning
1 teaspoon smoked paprika
1 teaspoon ground black pepper
2 c. chicken broth
2 teaspoons minced garlic
1 c. whole milk
1 medium-sized onion, chopped
¼ c. vegetable oil
How to make Southern Smothered Chicken
Step 1: Begin by cleaning the chicken.
Step 2: Into a large bowl, place 1 ½ cup flour. Add the garlic powder, onion powder, salt, pepper, celery seed, poultry seasoning, and smoked paprika. Stir well.
Step 3: With the seasoned flour, completely coat the chicken. Set the seasoned flour aside.
Step 4: Into a large pan, heat ¼ c vegetable oil over medium heat. Once the oil is hot, add the chicken (in batches) and cook until golden brown. Set the chicken aside when done and repeat with the remaining chicken.
Step 5: In the same pan, add the onions and saute for about 2 minutes. Next, add the garlic and cook for another minute until aromatic. Set the onions and garlic aside.
Step 6: To the now-empty pan, add three tablespoons of the seasoned flour. Stir well, then pour in 2 c of chicken broth, stirring constantly until the lumps are gone. Cook the gravy for about 2 minutes over medium heat before adding 1 c of milk. Allow the gravy to cook for another 3 minutes. Then, return the chicken to the pan along with the onions and garlic.
Step 7: Toss well until the chicken is completely coated with creamy gravy.
Step 8: Put the lid on and cook the chicken further, stirring often. This takes an additional 30 to 35 minutes.
Step 9: Take the dish off the heat and serve the Southern Smothered Chicken immediately with mashed potatoes or rice. Enjoy!
