Ingredients:
FOR THE PORK CHOPS:
2 tbsp olive oil
2 tbsp unsalted butter
1 tsp poultry seasoning or seasoning salt
1 lb. bone-in pork chops, 1-inch thick
¼ tsp fresh ground pepper
FOR THE ONION GRAVY:
3 cloves garlic, minced
¼ c heavy cream
1 tbsp unsalted butter
½ tbsp chopped fresh thyme
½ c low sodium chicken broth
1 large yellow onion, thinly sliced
chopped fresh parsley for garnish
A pinch of salt
Directions:
Sprinkle seasoning salt and pepper over the pork chops, then rub each until well coated.
Place a large skillet on the stove and turn the heat to medium-high.
Add oil and allow it to become hot.
Add butter and allow it to melt.
Add the pork chops into the hot skillet, then sear each side for a few minutes until they turn golden brown.
Move the seared pork chops onto a clean plate.
Add butter into the same skillet and allow it to melt.
Add the onion slices, then saute until they caramelize. Season with salt to taste. Make sure to stir from time to time.
Add the fresh thyme and garlic, then saute until aromatic.
Add the chicken broth, then scrape the bottom of the skillet to get the browned bits.
Add the heavy cream, then stir until well blended. Simmer the sauce for about a minute.
Bring the pork chops back into the skillet. Toss until well coated by the delicious sauce.
Turn the heat down to medium-low, then simmer everything for a few more minutes or until the texture of the sauce becomes thick.
Remove the skillet from the stove, then sprinkle freshly chopped parsley on top to garnish.
Serve and enjoy!

Place any leftovers in an airtight container, then place them inside the fridge. They can last up to 4 days.
