Ingredients:
5 strips thick-cut bacon
2 large boneless skinless chicken breasts
½ c Vegetable oil, for frying.
Chicken Dredge
½ c all-purpose flour
¼ c breadcrumbs, plain or Italian
1 tsp seasoned salt
¾ tsp black pepper
Gravy
4 tbsp Butter
4 tbsp Flour
2.5 c chicken broth
1 beef bouillon cube or 1 tsp better than bouillon
⅓ c half and half
1 tsp low sodium soy sauce, can sub-Worcestershire sauce
1 tsp onion powder
1 tsp garlic powder
¼ tsp dried thyme
¼ tsp dried rosemary
¼ tsp dried sag
2-3 drops Kitchen Bouquet, optional
Directions:
Add all the ingredients for the chicken dredge onto a large plate. Stir until well mixed.
Cook the bacon until crispy, then set aside the bacon grease.
Slice the chicken breast into two, then use a meat mallet to gently pound each until slightly flattened.
Use paper towels to pat dry the chicken slices, then coat each with the dredge mixture. Shake off any excess.
In the same skillet where you cooked the bacon, add vegetable oil and allow it to become hot.
Add the chicken and fry each side for about 5 minutes or until golden brown. Place them onto a clean plate.
Remove the oil from the skillet, then add butter and allow it to melt.
Add flour, then whisk and cook until it forms into a paste.
Add half&half and broth. Stir until well mixed. Make sure to scrape the bottom to get the brown bits. Cook until the texture becomes thick.
Add the rest of the ingredients for the gravy. Allow it to boil, then turn the heat down and simmer for a few minutes.
Put the chicken back to the skillet and toss until well coated.
Roughly chop the bacon, then scatter them over the chicken.
Cover and cook for about 10 minutes on low heat.
Sprinkle parsley on top.
Serve over mashed potatoes, rice, or noodles. Enjoy!
