Ingredients:
2 large russet potatoes, cut into 1-inch cubes
14 oz smoked sausage, sliced thin
1 small onion, chopped
½ c chopped bell pepper, green or red
1 clove garlic, minced
¼ chicken stock
1 ½ tsp paprika
¼ tsp salt and pepper
¼ tsp dried parsley
2 tsp vegetable oil
Directions:
Heat oil in a large skillet over medium heat.
Add the sausage, then cook until crumbly and brown.
Remove the sausage from the skillet onto a clean plate.
In the same skillet, add the potatoes and cook for a few minutes.
Add the garlic, onions, and pepper. Saute until soft and fragrant.
Add the chicken stock and stir until well mixed.
Cover the skillet and simmer for about 5 minutes.
Remove the cover, then stir in the spices.
Put the sausage back to the skillet and stir until well mixed.
Serve immediately and enjoy!
