Ingredients:
⅔ c peanut butter
⅓ c soy sauce
1-pound boneless skinless chicken breasts, cut into 1-inch cubes
1 red pepper cut into thin, long strips
1 c shredded zucchini
1 c chicken broth
1 c chopped cilantro divided
1 teaspoon sugar
12 oz. linguine noodles cooked and drained
2 cloves garlic minced
1 tablespoon lime juice
chopped peanuts for garnish
Directions:
In a slow cooker, add soy sauce, peanut butter, garlic, sugar, red pepper, broth, zucchini, broth, and chicken. Stir everything until well blended.
Cover and seal the slow cooker, then cook everything for about 4 to 5 hours on a low setting or 2 to 3 hours on a high setting.
30 minutes before the cooking time ends, add ½ cup of cilantro and lime juice. Stir until well blended.
Serve right away over noodles.
Sprinkle the rest of the cilantro and peanut on top to garnish. Enjoy!
