What I love the most about this recipe aside from the incredible flavors is the way it is cooked. All you need to do is to let the slow cooker do its thing and you are good to go! As simple as that. Ingredients:
1-pound lean ground beef
1 (15 oz.) can tomato sauce
1 (14.5 oz.) can diced tomatoes with garlic and onions
3 cups beef broth
1 cup cooked rice
1 yellow onion, finely chopped
1 green bell pepper, seeds removed, chopped
1 red bell pepper, seeds removed, chopped
½ teaspoon dried oregano
½ teaspoon dried basil
1 bay leaf
kosher salt and freshly ground pepper, to taste
Directions:
Step 1: Place a large skillet or pan on the stove and turn the heat to medium-high.
Step 2: Add in the beef and cook until the color turns brown. Reserve 2 tablespoon of grease and set aside. Discard of the rest.
Step 3: Place the skillet or pan back to the stove and sauté onions until translucent. Season with salt and pepper to taste.
Step 4: Transfer the beef mixture into a slow cooker. Add in the diced tomatoes, tomato sauce, rice, bell peppers, and beef broth. Season with basil, bay leaf, and oregano.
Step 5: Close the slow cooker and set to high or low. 3 hours on high and 6 to 8 hours on low.
Step 6: Taste to your liking. Add more seasoning if needed.
Step 7: Ladle into bowls.
Step 8: Serve hot and enjoy!
