I love this dish so much! Aside from the incredible taste, it is also very easy to cook. All you need to do is to toss everything in the slow cooker and let it do its magic! I have listed all the ingredients and directions so all you need to do is to follow them step by step and you are good to go. Enjoy!
Ingredients:
2 pounds fresh boneless skinless chicken breasts
1 tbsp olive oil
1 c low sodium chicken broth
2 tbsp lemon juice or lime juice
¼ c Tomato Paste
2 tsp chilli powder
1 tsp seasoning salt
1 tsp paprika
1 tsp garlic powder
¼ tsp Cayenne Pepper Add more if you want spicy chicken.
Optional Garnish:
fresh cilantro
red onion chopped
Fresh Lime slices
Directions:
Step 1: Apply cooking spray in a crockpot.
Step 2: Arrange the chicken breasts on the bottom of the greased crockpot.
Step 3: Drizzle olive oil on top and sprinkle the seasonings as well.
Step 4: In a mixing bowl, add the lemon juice, chicken broth, and tomato paste. Whisk until well mixed.
Step 5: Pour and spread the mixture over the chicken
Step 6: Cover the slow cooker and cook for about 4 hours or until done.
Step 7: Shred the chicken inside the slow cooker.
Step 8: Stir until the shredded chicken is well combined with the sauce.
Step 9: Cover the slow cooker and simmer for another 15 minutes on a low setting.
Step 10: Transfer the shredded chicken as well as the sauce into a serving dish.
Step 11: Sprinkle onions and cilantro on top.
Step 12: Serve with lemon slices and enjoy!
Note:
Place any leftovers in an airtight container and put them inside the fridge.
