Ingredients
1 pound cooked ham, coarsely diced
3 to 4 pounds Yukon Gold Potatoes, peeled and thinly sliced
¼ c. flour
8 ounces of cream cheese in small chunks
1 large white onion, peeled and thinly sliced
8 ounces of cheddar cheese, shredded
1 family-size can of cream of mushroom soup
1 c. milk
Italian parsley for garnish optional
kosher salt and black pepper
How to make Slow Cooker Scalloped Potatoes and Ham
Step 1: Set the slow cooker on a high setting. Using a nonstick spray, grease the inside of the crock.
Step 2: In a small bowl, place the soup and milk. Mix well until combined and set aside.
Step 3: On the bottom of the greased crock, place a layer of potatoes. On top, add a layer of onions and season with salt and pepper. Then, sprinkle with a little amount of flour. On top of the onions, evenly scatter a couple of chunks of ham, then add a layer of cheese. Do the same process, adding some of the cream cheese chunks.
Step 4: Evenly distribute half of the milk and soup mixture at halfway point, setting aside the rest for later.
Step 5: Proceed with the layering process and evenly scatter the rest of the milk and soup mixture at the end. Finally, top with the remaining shredded cheese.
Step 6: Cover the slow cooker and set it to cook for 6 to 8 hours. During the last hour or so, take the lid off to reduce the liquid if needed.
Step 7: Serve the Scalloped Potatoes and Ham garnished with parsley. Enjoy!
