I love this recipe of homemade tacos! It’s very easy to make and the ingredients are not difficult to find. I found them all in the grocery store. You will love these Queso Chicken Tacos for sure! Give it a try and feel free to add more ingredients if you feel like it. Enjoy!
Ingredients:
2 pounds boneless skinless chicken breasts
1 packet (1 ounce) of your favourite taco seasoning or use homemade
10 ounce can of Rotel with lime juice and cilantro (you can use Original Rotel too, or use homemade Rotel – Tomatoes and Green Chilies)
4 ounce can mild diced green chiles
½ cup chicken broth
¾ cup salsa con queso
taco shells, hard or soft
Favourite toppings – tomato, lettuce, onions, cheddar cheese, jalapenos, sour cream, fresh lime, cilantro, guacamole, queso, and hot sauce.
Directions:
Step 1: Apply cooking spray in a slow cooker.
Step 2: Arrange the chicken in a layer.
Step 3: Sprinkle the taco seasoning over the chicken. Make sure that all the chicken pieces are coated with the seasoning.
Step 4: In a medium mixing bowl, add the green chiles, Rotel, and chicken broth. Stir until well mixed.
Step 5: Pour in the mixture over the chicken.
Step 6: Cover the slow cooker and cook on low for 6 to 8 hours and 4 to 6 hours on high setting.
Step 7: Remove the accumulated broth and leave a small amount of it in the slow cooker.
Step 8: Remove the chicken and shred it.
Step 9: Add the queso and the shredded chicken. Stir until well mixed.
Step 10: Cover the slow cooker and cook for another 20 minutes on low setting or until hot.
Step 11: Spoon the Queso Chicken and place it in the middle of your taco or tortilla.
Step 12: Serve and enjoy!
Notes:
Slow cookers have different cooking times. Make sure to adjust depending on what you have.
I used the leftover Queso for toppings.
If you want it spicy, use Rotel hot instead of the original Rotel.
