Ingredients:
8 slices of bacon, cooked
1 tablespoon paprika
kosher salt
2 cloves garlic, thinly sliced
2 pounds of baby potatoes, halved and quartered if large
Freshly ground black pepper
3 cups shredded Cheddar
¼ cup sliced green onions, plus more for garnish
Sour cream, drizzling
Cooking spray
Directions:
Line aluminium foil to the bottom of the slow cooker, then coats the foil with cooking spray.
Add ½ of the potatoes, followed by 1 ¼ cups of the cheese, ½ of the garlic, ⅓ of the crispy bacon, ½ paprika, and ½ of the green onions into the prepared slow cooker. Repeat the process until everything is arranged in layers. Sprinkle salt and pepper to season.
Cover and seal the slow cooker, then cook everything for 5 hours on high heat.
About 20 minutes before the cooking time ends, add the rest of the bacon and cheese on top. Cover and cook for 20 more minutes.
Drizzle sour cream and sprinkle green onions on top to garnish.
