Ingredients:
1 red onion
6-8 chicken thighs – bone-in, skin on
1-1.5 pound baby potatoes
1 lemon
2 tablespoons olive oil
2 tablespoons honey
4 cloves garlic
½ tablespoon fresh thyme leaves
sea salt
pepper
bunch thin green asparagus
Directions:
Slice the peeled onion.
Add them into the slow cooker.
Place the chicken thighs over the onion slices.
Add the washed baby potatoes over the chicken thighs.
In a mixing bowl, add lemon juice, lemon zest, honey, olive oil, garlic, thyme, salt, and pepper. Stir until well mixed.
Pour the mixture over the potatoes.
Cover the slow cooker and cook for about 3 hours on a high setting or 6 hours on a low setting.
About 20 minutes before the cooking time ends, add the asparagus, then cover.
Serve and enjoy!
Note:
You can also broil the chicken thighs for 5 minutes inside the oven, then put them back into the slow cooker.
