This incredible dish is my ultimate comfort food! This Jambalaya slow cooker version is very easy to make. All you need is a slow cooker to all the work for you! Ingredients:
1 lb skinless, boneless chicken breast halves – cut into 1-inch cubes
1 lb andouille sausage, sliced
1 (28 oz) can diced tomatoes with juice
1 large onion, chopped
1 large green bell pepper, chopped
1 c chopped celery
1 c chicken broth
2 tsp dried oregano
2 tsp dried parsley
2 tsp Cajun seasoning
1 tsp cayenne pepper
½ tsp dried thyme
1 lb frozen cooked shrimp without tails
Directions:
Add the chicken, sausage, onion, green bell pepper, tomatoes, tomato juice, broth, and celery into a slow cooker. Stir until well combined.
Add parsley, oregano, cayenne pepper, Cajun seasoning, and thyme. Stir until well mixed.
Cover the slow cooker and cook for about 8 hours on a low setting or 4 hours on a high setting.
30 minutes before the cooking time ends, add the shrimp and stir until well mixed.
Serve hot and enjoy!
