This is the sandwich is the best of the best! Tender meat, melted cheese, and caramelized onions! You know what I’m talking about. Give it a try and enjoy!
Ingredients:
2-3 lbs beef chuck roast or rump roast trimmed of excess fat (I’ve also used a sirloin roast and boneless bottom round for a leaner option)
3 c low sodium beef broth
¼ c Worcestershire sauce
2 tbsp extra virgin olive oil
2 yellow onions quartered and thinly sliced
3 cloves of garlic minced
1 bay leaf
Salt/pepper
4-6 rolls nothing too soft or it will fall apart once dipped
8-12 slices cheese (provolone, Swiss, Havarti or Monterey Jack)
Directions:
Step 1: Rub a generous amount of salt and pepper on your roast.
Step 2: Add in the beef broth and Worcestershire sauce in a glass measuring cup.
Step 3: Place skillet or Dutch oven on the stove and turn the heat to medium-high.
Step 4: Add in the oil and allow it to become hot.
Step 5: Add in the meat and cook the crust is brown.
Step 6: Place the meat into the slow cooker.
Step 7: Turn the heat down to medium and add in the onions, then cook for about 5 minutes or until done.
Step 8: Add in the chopped garlic and cook for another 2 minutes.
Step 9: Add in a generous amount of beef broth and make sure to scrape the bottom.
Slow Cooker:
Step 1: Pour the onion mixture with the meat into the slow cooker and pour in the rest of the broth as well as the bay leaf.
Step 2: Cook for 3-4 hours on high heat and 5-6 hours on low or until the meat is fork-tender.
Step 3: Place the meat on a cutting board and slice it into small pieces.
Step 4: In a large mixing bowl with a fine-mesh strainer, pour in the sauce from the slow cooker and set aside the onions.
Step 5: Put the sliced meat and onions back in the slow cooker, and then season with au jus, salt, and pepper to taste.
Step 6: Fill the toasted rolls with the meat and onions, and then cover it with a generous amount of cheese.
Step 7: Place them inside the oven and bake at 375 degrees F until the cheese has melted completely.
Step 8: Serve with au jus and enjoy!
