This Slow Cooker Creamed Corn is my ultimate comfort food! I promise you that it is worth all your time and effort! If you have a couple of hours to spare before lunch or dinner, then this will be perfect! I have listed all the ingredients and directions so all you have to do is to follow them step by step and you are good to go! Feel free to add more ingredients if you wish but I bet there’s nothing else that can make this recipe even better because it is already perfect! Ingredients:
nonstick cooking spray
4 tbsp butter, cubed
2 lbs. frozen corn kernels (2 x 16 ounces packages)
BLENDER CREAMED CORN
4 ounces cream cheese, cubed
1 c ricotta cheese
1 c frozen corn from the above-listed packages (in directions)
1 tbsp sugar
½ c heavy cream
1 tbsp flour
¼ tsp EACH McCormick® Rosemary Leaves, Thyme Leaves, Paprika, Onion Powder, Pepper
½ tsp McCormick Garlic Powder
1 tsp McCormick® salt
Dash of McCormick cayenne pepper (optional)
GARNISH
green onions, chopped
4-6 strips bacon, cooked and crumbled
Directions:
Apply cooking spray in a slow cooker.
Add 1 cup of corn from the pack into a blender.
Add the rest of the corn into the prepared slow cooker.
Add the rest of the ingredients for the creamed corn into the blender. Pulse until well blended and smooth.
Transfer everything into the slow cooker as well as the butter. Stir until well mixed.
Cover and seal the slow cooker, then cook for about 2 to 4 hours on a high setting or 4 to 6 hours on a low setting. Make sure to stir from time to time. Add more seasonings if needed.
Sprinkle crumbled bacon and green onions on top.
