Ingredients:
6 (1.5 lbs, total) boneless, skinless chicken breasts
1 tsp garlic powder
1 tsp dried basil
1 tsp dried thyme
½ tsp sweet paprika
salt and fresh ground pepper, to taste
1 tbsp olive oil
8 oz mushrooms, sliced
3 cloves garlic, minced
1 c dry marsala wine
½ c water
¼ c cornstarch
¼ c heavy cream
chopped fresh parsley, for garnish
Directions:
Step 1: Apply cooking spray in a 6-quart slow cooker.
Step 2: Apply cooking spray in a 6-quart slow cooker.
Step 3: Season with garlic powder, thyme, dried basil, paprika, salt, and pepper the chicken breasts.
Step 4: Place a skillet on the stove and turn the heat to medium-high.
Step 5: Add olive oil and allow it to become hot.
Step 6: Add the seasoned chicken breasts into the skillet with hot oil and cook for 3 minutes on each side or until lightly brown.
Step 7: Remove the chicken from the skillet and put them into the prepared slow cooker.
Step 8: Add the mushrooms and garlic on top of the chicken.
Step 9: Put the skillet back onto the stove and turn the heat to medium-high.
Step 10: Add the marsala wine. Stir and scrape the bottom of the pan to get the brown bits. Cook the wine for about a minute.
Step 11: Transfer the wine into the slow cooker and pour it on top of the chicken and mushrooms.
Step 12: Cover and seal the slow cooker. Cook for about 4 hours on a low setting and 2 hours on a high setting.
Step 13: Remove the chicken and put them on a clean plate.
Step 14: In a small mixing bowl, add the cornstarch and water. Stir until well mixed.
Step 15: Pour the dissolved cornstarch into the slow cooker and whisk until well mixed.
Step 16: Add the heavy cream and whisk until well blended.
Step 17: Put the chicken breasts back to the slow cooker. Cover and cook for another 20 minutes on a high setting or until the sauce becomes thick.
Step 18: Spoon the chicken breasts onto serving plates and don’t forget to spoon the sauce on top as well as fresh parsley.
Step 19: Serve and enjoy!
