Creamy, spicy, and loaded with shredded chicken, corn, white beans, green chiles, fire-roasted tomatoes, and many more! This Slow Cooker Buffalo Chicken Chili is an amazing recipe that will surely be a big hit especially if you love buffalo chicken! Also, a fun, delicious way to change up chili nights!
Ingredients
1 tsp garlic powder
½ tsp onion powder
1 ½ lbs boneless, skinless chicken breasts
2 stalks of celery, diced
2 green onions, thinly sliced
15 oz. can cannellini beans or white beans
14.5 oz. can fire-roasted tomatoes
4 oz. can dice green chiles
½ c. hot sauce, such as Franks Buffalo Sauce
½ c. frozen corn
4 oz. low-fat cream cheese, room temperature
½ c. plain Greek yogurt
3 c. low sodium chicken broth
Blue cheese, cheddar cheese, cilantro, and green onions for toppings
2 tsp chili powder
2 tsp ground cumin
How to make Slow Cooker Buffalo Chicken Chili
Step 1: To a slow cooker, add the chicken breasts along with the rest of the ingredients except for the cream cheese and Greek yogurt. Mix well and put the lid on. Set to cook for 4 to 6 hours on low or 3 to 4 hours on high until the chicken breasts are completely cooked.
Step 2: Onto a plate, transfer the chicken breasts and shred them. Into the slow cooker, add the cream cheese, and stir well until the lumps are gone. Return the shredded chicken and replace the lid. Set to cook for another 30 minutes on low.
Step 3: After 30 minutes, quickly stir in the Greek yogurt. Adjust the seasoning according to taste.
Step 4: Serve the chili right away garnished with shredded cheese, blue cheese crumbles, green onions, cilantro, and more hot sauce (optional). Enjoy!
Notes:
Adjust the cooking times according to your slow cooker and the size of the chicken breasts.
You can keep any leftovers in the fridge for up to 4 to 5 days.
