Cooked to perfection in the slow cooker, this Broccoli Cheddar Soup is what will make you warm on a cold day! It is so smooth that you would crave it constantly! Give this recipe a try now, and prepare to fall in love. Enjoy!
Ingredients:
3 tablespoons unsalted butter
2 c shredded cheddar cheese
4 c chicken stock (or vegetable stock)
⅓ c all-purpose flour
4 c broccoli florets, cut into small bite-sized pieces
⅛ teaspoon nutmeg
½ yellow onion, diced small
1 c half and half
2 c shredded carrots
1 teaspoon kosher salt
½ teaspoon black pepper
Directions:
In a slow cooker, add chicken stock, broccoli, onion, nutmeg, salt, pepper, shredded carrots, and chicken stock. Stir until well blended.
Cover and seal the slow cooker, then cook for about 4 hours on a low setting. Adjust the setting to high.
Place a small saucepan on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the flour slowly, then whisk continuously until well blended.
Take 1 cup of the liquid from the slow cooker, then pour it slowly into the pan together with half & half. Stir until well blended.
Add the shredded cheese and stir until melted completely.
Transfer the cheese sauce into the crock pot, then stir until well blended.
Serve right away. Enjoy!
Notes:
Place any leftovers in an airtight container, then place them inside the fridge. Reheat on the stove over low heat. (Although,
I don’t think there will be leftovers!)
Make sure to melt the butter completely before adding the flour.
Also, for the best consistency, make sure to add the stock gradually while whisking.
