Ingredients:
Beef Stew:
900 g (2 pounds) braising steak/ chuck steak, cubed
2 tbsp flour seasoned with pinch salt and pepper
480 ml (2 c) hot beef stock (broth)
80 ml (⅓ c) red wine or dark ale or more beef stock
3 tablespoons tomato paste
2 tablespoons balsamic vinegar or Worcestershire sauce
3 tablespoons dark soy sauce
1 teaspoon salt
½ teaspoon black pepper
2 large onions, finely diced
2 leeks, white parts only, sliced
5 carrots, sliced
4 parsnips, sliced
2 bay leaves
1 sprig rosemary
Fresh parsley, chopped, to garnish
Salt and pepper, as needed
Light Dumplings (suet free):
125 g (1 c) self-raising flour
125 g ( ½ c) fat-free yoghurt
1 tablespoon chopped parsley or chives
2 tablespoons grated Parmesan
1 teaspoon garlic granules
½ teaspoon salt
water, as needed, to bind
Suet Dumplings:
125 g (1 c) self-raising flour
125 g (1 c) shredded suet or vegetable shortening
1 tablespoon chopped parsley or chives
2 tablespoon grated Parmesan
1 tablespoon horseradish or mustard
1 teaspoon garlic granules
½ teaspoon salt
cold water, as needed, to bind
Directions:
To Make the Stew:
Step 1: Coat the beef cubes with the seasoned flour.
Step 2: Prepare the slow cooker and preheat to a high setting.
Step 3: Add in the red wine, hot beef stock, balsamic vinegar, soy sauce, tomato paste, garlic, salt, and pepper. Stir until well combined.
Step 4: Add in the leeks, parsnips, onions, carrots. Stir until well mixed.
Step 5: Add in the bay leaves, rosemary, and beef. Stir until well mixed.
Step 6: Turn the setting to high and cook for 5 hours or 8 hours on a low setting.
CHOOSE YOUR DUMPLINGS:
Light Dumplings:
Step 1: In a medium mixing bowl, add the flour, Parmesan cheese, garlic granules, herbs, and salt. Whisk until well combined.
Step 2: Add in yoghurt and knead until the mixture becomes a dough. Make sure to add more water if the texture becomes too crumbly.
Step 3: Split the dough into 6 or 8 parts and roll them into small balls.
Suet Dumplings:
Step 1: In a medium mixing bowl, add the flour, Parmesan cheese, garlic granules, herbs, suet, and salt. Beat until well combined.
Step 2: Add in cold water gradually and use your hands to mix until well combined. Make sure not to overmix.
Step 3: Split the dough into 6 to 8 parts and roll them into small balls.
Finish cooking the stew:
Step 1: Stir the stew and discard the rosemary and bay leaves.
Step 2: Add the dumplings into the slow cooker and leave a space between each dumpling.
Step 3: Cover the slow cooker and cook for another 1 hour.
Step 4: Add more seasoning if needed.
Step 5: Sprinkle freshly chopped parsley on top.
Step 6: Serve and enjoy!
