Oh, my! I am so impressed by this delicious squash casserole! I just love everything about it. From the ingredients to the complex flavours! In just about an hour, you will surely have the best lunch or dinner ever. Enjoy!
Ingredients:
3 lb. yellow squash, sliced or diced
½ cup diced Vidalia onion, optional
1 can(s) cream of mushroom or chicken soup, 10.5 oz.
1 cup mayonnaise
1 Egg
8 oz. shredded cheddar cheese (sharp is my favourite)
1 teaspoon salt
½ teaspoon fresh ground black pepper
TOPPING
2 sleeves of Ritz crackers, crushed
1 stick melted butter
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Slice the washed squash into thin medallions.
Add the slices of squash into a large mixing bowl.
In another mixing bowl, add the eggs, soup, mayonnaise, onions, cheese, salt, and pepper. Stir until well mixed.
Pour the mixture on top of the squash. Stir until well coated.
Transfer the mixture into a casserole dish and spread it evenly.
Crush the crackers with a rolling pin.
Sprinkle the crushed crackers into a mixing bowl.
Place the butter inside the microwave and heat it until melted completely.
Add the melted butter into the bowl with the crushed crackers, then stir until well mixed.
Drizzle the mixture over the casserole and spread it evenly.
Cover it with aluminium foil.
Place it inside the preheated oven and bake for about 30 minutes.
Remove the cover and bake for another 20 minutes or until the top turns golden brown.
Remove from the oven and allow it to rest for a few minutes at room temperature.

Notes:
Feel free to add one cup of shredded chicken for extra flavour.
You can also add 2 cups of rice.
