Ingredients:
Ginger & Vinegar Sauce (2 servings)
3 tablespoons black rice vinegar
¼ teaspoon honey
1 teaspoon ginger, julienned
Dill, to taste
Garlic & Vinegar Sauce (2 servings)
1 tablespoon garlic, minced
1 pinch ground Sichuan pepper
1 pinch salt
1 tablespoon hot oil
½ teaspoon light soy sauce
2 tablespoons black rice vinegar
Fresh chilli, finely chopped
Coriander, chopped
Spring Onion Oil Sauce (2 servings)
1 tablespoon spring onion, finely chopped
1 pinch sugar
1.5 tablespoons hot oil
2 tablespoons light soy sauce
½ teaspoon black rice vinegar
Spicy tomato dip (4 servings)
250 g ripe tomatoes, peeled and deseeded
2 cloves garlic
2 slices ginger
1 fresh chilli, or to taste
4 strands coriander
¼ teaspoon salt
1 pinch sugar
½ teaspoon light soy sauce
Sichuan Dumpling Sauce (1 serving)
1 tbsp Sichuan spiced sweet soy sauce
1 teaspoon garlic, minced
1 tablespoon homemade chilli oil, or to taste
Spring onion, finely chopped
Hot and Sour Dumpling Soup (1 serving)
1 teaspoon light soy sauce
2 tablespoons black rice vinegar, or spiced vinegar,
1 tablespoon spring onion, finely chopped
1 teaspoon papery dried shrimp, optional
½ teaspoon Chinese sesame oil
1 pinch salt
Toasted sesame seeds
Coriander, chopped
1 tablespoon homemade chilli oil, or to taste
Directions:
For the Ginger and Vinegar Sauce:
In a mixing bowl, add all the ingredients and stir until well mixed.’
For the Garlic and Vinegar Sauce:
In a mixing bowl, add the Sichuan pepper, salt, and hot oil.
Add the rest of the ingredients and stir until well mixed.
For the Spring Onion Oil Sauce:
In a mixing bowl, add sugar, spring onion, and hot oil.
Add vinegar and soy sauce. Stir until well mixed.
For the Spicy Tomato Dip:
In a food processor, add garlic, tomato, coriander, and chilli. Pulse until well combined.
Add sugar, soy sauce, and salt. Stir until well combined.
For the Sichuan Dumpling Sauce:
In a mixing bowl, add the Sichuan spiced sweet soy sauce and garlic.
Add the dumplings and chilli. Stir until well mixed.
Sprinkle spring onions on top.
For the Hot and Sour Dumpling Soup:
In a mixing bowl, add vinegar, soy sauce, dried shrimp, spring onion, salt, and sesame oil. Stir until well mixed.
Add the dumplings and a bit of water.
Add chilli oil, coriander, and sesame seeds. Stir until well mixed.
