Whenever my family comes over for the holidays, I always make sure to serve this Simple Whole Roasted Chicken with Lemon. This takes us to the good old days when we were little. See, my grandma used to make this all the time! It’s a simple reminder to us that she is still with us. Anyway, I have listed all the things you will be needing. Enjoy!
Ingredients:
½ c chicken stock or water
1 (5 to 6 lbs.) whole chicken, patted dry
Salt and fresh ground pepper
1 whole head garlic, halved crosswise
Small bunch fresh herbs, such as thyme, rosemary, and sage, optional
1 onion, sliced (optional)
1 lemon, quartered
Directions:
Sprinkle salt and pepper all over the whole chicken, then rub until well coated.
Prepare the oven and preheat to 218 degrees C or 425 degrees F.
Scatter the onions to the bottom of a roasting pan.
Pour the stock on top of the onions.
Lay the chicken over the onions.
Stuff the chicken with herbs, lemon wedges, and garlic. Make sure to get them all in the cavity.
Tie the legs of the chicken with kitchen twine.
Place the whole chicken inside the preheated oven and roast for about an hour. Make sure to spoon the juice over from time to time to baste the whole chicken.
Add more minutes to the roasting time if the chicken is not ready for serving yet. The roasting time depends on the size and weight of the chicken.
Remove from the oven and allow it to rest at room temperature for a few minutes to incorporate all the flavours.
Slice into pieces.
