Ingredients:
1-½ c shredded cheddar cheese
1 (30-32 ounces) bag of frozen tater tots
½ c mozzarella cheese
2 pounds hot breakfast sausage
1 teaspoon salt
¼ teaspoon garlic powder
2 c milk
½ teaspoon pepper
¼ teaspoon onion powder
8 Eggs
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray to the inside of a 9×13-inch baking pan.
Place a large skillet on the stove and turn the heat to medium-high.
Add the sausage into the preheated skillet, then cook for a few minutes or until crumbly and brown. Remove and discard any accumulated fat. Transfer the sausage into a large bowl.
Add the cheeses and tater tots into the bowl with the sausage, then stir everything until well incorporated. Allow the cheese to completely melt.
Transfer the mixture to the prepared baking pan and spread it evenly.
In a separate bowl, add garlic powder, salt, pepper, milk, and eggs. Whisk everything until well blended.
Pour the mixture over the tater tot mixture and spread it evenly. Make sure to cover the top.
Place the baking pan in the preheated oven and bake the casserole for about an hour.
Remove the baking pan from the oven and let it cool for a few minutes at room temperature to incorporate all the flavors.

Notes:
You can make this casserole ahead of time. Just let it cool first, then place it in the fridge. Bake the next day.
Place any leftovers in an airtight container, then place them in the fridge. Reheat in the microwave for a few minutes just until warm.
