Ingredients:
1 large Egg yolk
3 c fresh spinach or 1 c frozen
2 large Eggs
½ c diced yellow onion
½ c milk
1 c sharp cheddar cheese divided
½ c heavy cream
salt and pepper
½ pound sliced mushrooms, baby Bella
1 tbsp butter
1 pre-made crust prepared as directed
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Refer to the directions provided on the package of the crust on how to bake it.
Remove the crust from the oven and allow it cool for a few minutes at room temperature.
Place a large skillet on the stove and turn the heat to medium-high.
Add butter and allow it to melt.
Add the onions into the hot skillet, then sauté for a few minutes until soft.
Add the mushrooms, then sauté for a few minutes until soft.
Add the spinach, then cook until completely wilted.
In a mixing bowl, add milk, eggs, egg yolk, cream, pepper, and salt. Whisk everything until well blended.
Sprinkle ½ of the cheese on top of the crust.
Add the vegetable mixture over the cheese, followed by the rest of the cheese.
Pour the egg mixture on top of the cheese and spread it evenly.
Place inside the preheated oven and bake for about 30 minutes or until done.
Remove the Spinach Mushroom Quiche from the oven and allow it to cool for at least 10 minutes at room temperature.

Notes:
Feel free to use frozen spinach for this recipe.
