I can’t count how many times I’ve made these Smashed Sweet Potatoes! I learned about this recipe a couple of years ago, and I’m still in love with it to this day! The ingredients for this recipe are pretty simple. I’m pretty sure you already have them in your drawer or fridge! Just follow these easy steps for they will guide you to perfection. This recipe can yield up to 6 servings. Enjoy!
Ingredients:
1 tablespoon thyme leaves
¼ cup butter, melted
small pinch nutmeg
½ cup freshly grated Parmesan
3 garlic cloves, minced
kosher salt
2 large sweet potatoes, or 3 medium sweet potatoes
Freshly ground black pepper
Directions:
Prepare the oven and preheat to 218 degrees C or 425 degrees F.
Cut the potatoes into 1-inch round shapes. Place them into a large mixing bowl.
Add thyme, butter, nutmeg, salt, pepper, and garlic into another mixing bowl. Stir everything until well incorporated.
Pour the butter mixture over the potato slices, then toss until well coated.
Add the potato slices onto a large baking sheet and arrange them in a single layer. Make sure to leave a space between each potato slice.
Place the baking sheet in the preheated oven and bake the potato slices for about 30 minutes or until they turn golden brown.
Remove the potatoes from the oven, then use a potato masher to mash them.
Put the mashed potatoes back in the oven and broil for 5 more minutes.
Remove the Smashed Sweet Potatoes from the oven and top each with a sprinkle of Parmesan cheese.
Let the Smashed Sweet Potatoes rest for a few minutes at room temperature.
Serve warm and enjoy!
