I am sure that everyone in your family is going to love this Slow Cooker Sausage and Potato Casserole! The best thing about this is that you can serve and eat it pretty much any time of the day! With a very simple set of ingredients, you can have quality food in the comfort of your home. Enjoy!
Ingredients:
10.5 ounces can cream of chicken or mushroom soup
½ c sour cream
1 small onion, diced
1-32 ounce bag of hash browns or may substitute fresh diced potatoes
salt and pepper to taste
2 ½ c shredded cheddar cheese
14 ounces kielbasa, cut into small pieces
Directions:
Apply cooking spray to a slow cooker, then add 2 cups of cheese, onion, hash browns, and kielbasa. Stir everything until well incorporated.
In a mixing bowl, add salt, pepper, cream of chicken, and sour cream. Stir everything until well blended. Add the mixture into the slow cooker over the hash brown mixture.
Scatter the shredded cheddar cheese on top.
Cover and seal the slow cooker, then cook everything for about 6 to 8 hours on a low setting or 4 to 5 hours on a low setting.
Make sure not to overcook the potatoes. When the potatoes are fork-tender, the dish is ready for serving.

Notes:
Sauté the sausage and onion before putting them into the slow cooker. Feel free to use frozen potatoes for this recipe. You just need to cook them a little longer.
Place any leftovers in an airtight container, then put them in the fridge. Reheat for a few minutes before serving again.
